BBQ at Woodstock Wine & Deli
Over 10 years ago, the Deli hosted a local Guest Chef event with Tom Brown, of “Mr. Brown’s Barbecue Sauce” fame. It was such a hit that for the next few years, we had Tom over during the summer months to cook up his delicious BBQ for all to enjoy. Prep and cooking his BBQ was a lot of work, a true labor of love. As Tom got older, he wanted to spend more time marketing his sauce for national distribution rather than cooking so much. Customers really missed the BBQ at the Deli, and that's when we decided to try and produce our own BBQ; and Woodstock Wine & Deli “Bad Boys BBQ” was born. The name “Bad Boys” refers to the original three, Dave Mork, Zac Perry, and yours truly. 2010 will be the tenth season of championship-style BBQ from the Deli, that started with the original “Bad Boys”, hanging out way too-late after hours looking at our way too-old Weber kettle, and deciding to buy a real “smoker” or “pit” as they’re called in BBQ country. The smoker is the key, and the combination of smoking and our special slow-grilling is what makes the WWD “Bad Boys BBQ” unique. We use only lump Mesquite charcoal (no briquettes) for our smoking/grilling heat and seasoned whole (no chips) Mesquite, Hickory, and Oak for smoking wood. Our fresh pork babyback and spareribs are skinned and prepped with freshly ground “Bad Boys BBQ Rub”, slow smoked with indirect heat in our trailer “pit”, then slow finished on our special “pit-grill” and served with “Bad Boys BBQ Sweet Whiskey Sauce” on the side. Fresh local “Bad Boys BBQ Chicken” is also a customer favorite. Don’t forget to try out our “Bad Boys BBQ Baked Beans” and “Bad Boys BBQ Slaw” too!
In 2005 this interest in BBQ lead me to become a KCBS CBJ (Kansas City BBQ Society-Certified BBQ Judge). For the next few years I professionally judged KCBS sanctioned BBQ competitions. These BBQ competitions are where competitive BBQ teams cook chicken, pork ribs, pork butt, and beef brisket. Teams compete to win each of the four meat categories, but strive to accumulate total points to win first place, “Grand Champion”, or second place “Reserve Champion”.
In 2008 “Woodstock Smokers” debuted as our competition BBQ team from Woodstock Wine & Deli.
